The Niche-Market has enabled small US pig farms, like the 150-year-old Wilson Prairie Landscape Farm founded by Scottish immigrants in 1870, to thrive. Now run by 84-year-old Scott and his children, the farm integrates a front store with back-end slaughtering and processing, and raises pigs outside the city to offer fresh, flavorful pork to locals. Whole pigs are often booked for roasting. During our visit, retirees, perhaps nostalgic for childhood flavors, filled the store. Scott and his daughter warmly welcomed us, offering boneless smoked ham and pork chops. I made a delicious three-course meal with the ham and plan to try the fried pork chops tomorrow.
